Got the Jambo fired up and the the rack of plate ribs seasoned. Just waiting on the fire to burn down and the pit to come to temp.

This is my first rack of beef ribs to cook and eat. Lots of anticipation!
Brisket on a stick!
I also picked up a bone in pork loin roast, but decided to freeze it for later. Wanted to focus on the ribs.

They are very rich tasting compared to a brisket. I used to debone the short ribs that didn`t sell and buy them for 1.99 lb. Perks that went with the jobconfused2. I threw them on the smoker for a couple of hours and then finished them off in a crock pot with some of my BBQ sauce. Tender as my heart.

Pulled at 12:30, temp was 203 and probe tender. Wrapped in butcher paper and into the oven on low for a rest for a few hours. Had some Kialbassa garlic sausage links for lunch. Chicken went on at 1:15.

Well, here’s a pic of the finished product. It’s tender and packed with flavor. But not much bang for the buck, meaning there’s not a lot of meat for the price you pay. Probably won’t do them again any time soon. Wife and I will probably get 2 or three more meals after splitting one rib. Will chop and use for tacos.

By the time you lose 40% in the smoking process and then throw away the bone, there`s just not enough juice for the squeeze. Beef prices have gotten ridiculously high, and I only buy it when it is on sale at a good price and that`s not very often. Pork, chicken and shrimp are a much better value. I`d much rather have fried shrimp than a steak any way. We probably buy close to 40 lbs. of shrimp per year. HEB runs it on sale for 4.99 a pound and I buy at least 10 pounds every time.

I agree TPack, beef prices are high. I could have bought 3 prime ribeyes for the cost of the beef ribs. I love shrimp, I wish my wife would eat it, then I’d cook it at home.

Those look great. I love the ribs too, but agree that ribeyes are a better bang for the buck

The flavor of those ribs, is hard to beat though !
When cooked right, which you obviously did.
