Really easy, for when you and the missus have a sweet craving!
Pretty simple, a lot like many others but easier for me. No salt or flour, and only half the eggs. Just right for the wife!!
Mix: 2 cups whole or 2% milk 1/4 cup white sugar (skim milk is too thin, and half/half will make the custard very thick and dense. Heavy cream will separate the fat and tends to be greasy) Bring to a boil, for one minute. Remove from heat
Mix well: 2 egg yolks 1 whole egg 1/2 cup white sugar 1/4 cup corn starch Slowly pour hot mixture into this egg mixture, very slowly at first to temper the mix and prevent cooking the eggs. Stir constantly with a whisk. Return to the stove and bring back to a boil. Cook until it reaches the desired thickness. It should stick on the whisk. Remove from stove.
Add to the hot mixture at the end, when finished cooking and make sure it is fully blended 2 tablespoons butter 1 teaspoon vanilla
Transfer to a heat resistant bowl, and cover the mix with Saran Wrap right on top of the mixture to prevent forming a "skin". Place in refrigerator for 2-3 hours and fully cool.
