Anyone have a proven queso recipe? My wife and I tried but it came out very grainy . You have to buy quality cheeses when making it from blocks of cheese. Buying store brand cheeses bit me in the butt a few times.

We were trying to avoid velveeta Why avoid it - lots of natural cheeses are better than one.

Made some yesterday to go with the tamales. Made a cheese sauce like you would for home made mac and cheese rather than the typical Velveeta(works but not very chef like)
Heat heavy creme but don't boil it, it will separate. Add grated Oaxaca cheese (mexican melting cheese), Rotel or any other tomato and chilis, dried minced onion. and then season with salt pepper garlic ( I have been using meat church Blanco a lot for this part).Put in the crock pot on low to keep it warm.
Turned out great!

I like the simple method. Velveeta and hot Rotel is my favorite by far. You can put this and that in it, but at some point, it becomes something else. My daughter-in-law puts milk or heavy cream in hers and I will not touch it at all. My grandson is a very good cook, and he uses several different cheeses but the juice just isn`t worth the squeeze for me. The 2 ingredients Queso is great and no need to reinvent the wheel.

Google a “copycat torchys queso”. No velveta and is a really good queso. I’m a connoisseur of queso, and it’s one of my favorites
