Used to not really use these cuts (hard to get the meat off the bones and a lot of connective tissue) until I got feeling bad about that and experimented with cooking them a long time and then removing the meat from the bones. These tamales were delicious today, 6 or so dozen from 2 necks and the shank meat from the same 2 deer. Merry Christmas everyone! Chilis were smoked chipotles I made from our garden.

Shanks and neck roasts are some of the best cuts on the deer. Looks great.
