I know some of you will think this is blasphemy, but I don't have a real smoker and wanted to cook some of my $1.87/lb. briskets, so tried it with my gas grill. I was pretty amazed with the results. I used a smoker box with one burner and kept the temp between 225 and 250. I used apple wood and refilled the box about every 1 to 1-1/2 hours. I was surprised at how much smoke it produced. I've done two of them this way and was very happy with the tase and tenderness.

I do mine the same way sometimes and it works fine. With a 4 burner, it's much easier to maintain steady temp. Good job!!

Can’t be much different than like a pellet smoker which so many rant and rave about. Got a few racks of ribs going now can’t wait for lunch.
