Love mesquite fires. Hardest thing is waiting for them to get right, then you can sit around and cook for hours at the proper heat!!

I would have wrapped them in foil to keep them from drying out (moist heat) but that`ll work fine. I`ve got 6 dozen homemade tamales ordered for Christmas (15 per). I vacuum seal mine (6 per) and the sous vide for about an hour at 165 degrees.
