Nice day today, clouds and snow cleared out and it's about 40 degrees already.
Almost waited too late to get the smoker fired up for some butter and later a backstrap.
I use Amish salted butter and smoke with pecan and white oak for about 4 hrs, maybe 3.
I have to keep a low fire and after I pull the butter I'll put one of the straps from my mule deer buck on it and add some heat.

The butter goes in the frig for several weeks to temper before I use it and give some away.

Looks GREAT Wytex!!! But didnt know there were pecan trees up that far. Of course I aint very smart of other parts of the U.S.

Great time for smoking! that reminds me, years ago there used to be a deli store in Austin TX,
that had smoke butter both soft and stick butter. Forgot the name, thats what being does to you,
think some smoked jerky here soon and some butter would be great on it!


Would be easy to make a cold smoker, just find a small old refrig that is dead and use it for the smoke box, and
'pipe in the smoke from an outboard fire but very low heat, just have the smoke vent through the cooler.....
this colder time of year would be perfect, warm days would not be so good on fresh or your butter.


Emm, smoked butter on popcorn?

I use the smoked butter in cooking.
It is great in an alfredo sauce, mashed potatoes and in making chicken stock for soups.
