Well the storm that's pummeling Colorado has moved in here. We're supposed to get snow through Saturday and the spouse is going elk hunting in the morning, good luck with that !!
Actually I hope they have great success as he is taking a co workers son for his 1 st elk.

Instead of cutting shanks this year we just boned them out for boneless shank roasts.
I tied it up and put some garlic between the layers.
I add a little beef bouillon to the pot and onions and carrots.
Potatoes later.

Corn bread to go with, should be ready when we get back from a few cold ones this evening.

Potatoes added.
Off for a few cold beers and then shank roast with cornbread for supper.

I always find it interesting how these types of roasts shrink when cooking.

I braise my roast in a cast iron Dutch oven just like that. Low and slow in the oven and they come out fantastic! With a crunchy crusted skillet corn bread, that is my kind of cold day meal right there!
