Making room in the freezers for this year's harvest. Going on a cow elk hunt and maybe 2 deer off the place.
This batch of snack sticks came out really good cut them into 8" sticks and vacuum packed 4 to the bag. I have one more batch to smoke tomorrow for 11 lbs total. I had a picture of the tuber/stuffer, but the wife was in the picture and she said NO to posting.

Those are beautiful! I love all types of pepperoni and snack sticks. Hunting food for sure!!!

well done! how long do you smoke those? do you get them to a certain internal temperature? have some type of curing salt?

we used to make all sorts of sausages including a few with curing salt so they kept i.e. summer sausage, dried sausage ... but never made snack sticks (but I love them when I get done at a processor, but holy cow are they expensive).

This is what I use. Curing salt and seasoning is included to make 20 lbs.
Once tubed place on smoker at 225 degrees for 2 hours or when internal temperature is 165. Let cool then vacuum pack, freeze what you don't eat now.
