First year on this property in North Texas and am trying to get acclimated with the deer. Any idea on how old this buck is?

New last pic is a different younger deer with less points and mass. Your deer is older, probably 5.5-6.5yo, sagging brisket skin, Roman head, lots of face, neck wwrinkling. Feed him a lead diet if you'd like, definitely old enough.

Agree. The big boy in the first few pics is mature - face, brisket, little back sway. You could convince me he's on the way downhill. Time to shoot him. The last one is a younger deer that he probably sired.

I agree this deer is older, and he is a classic example of a long leggy deer but his face shows his age.
