Make breakfast sausage 50/50 mix with pork shoulder and high mountain original breakfast sausage seasoning. If I'm making snack sticks that is from hamburger meat at a later date. While I'm deboning and cutting my wife is running the vacuum packer and labeling with a sharpie.
Lots of youtube info on how to process one.

So, you're looking at about 8 total hours to do all that, plus the cost of spices and pork shoulder...........I make way too much $ to not pay the man to do it for me.

So, what do you think a fair price is for 8 hours of work and cost of extras and supplies.

Just picked up my first deer from Griggers in Gordon and it was some of the best jalapeno sausage I've had.

I generally have 4 quarters made into jalapeno/cheese sausage by Kuby's in Dallas each year. It's a sad day at home when we finish the last links.
