My cardiologist told me that my cholesterol levels are important, so I am doing my part to given them a boost with bacon wrapped beer bratwurst.  Nothing fancy, but very tasty! I made some crispier than others to test it out. ![[Linked Image]](http://centexbatteries.com/personal/brats5.jpg)

The best you can do is cook them long, and slow. That allows all the bad fats to render out, and only keeps the flavor ones. Good job!!!

I learned that with Sous Vide, but it can apply to the grill, oven or convection cooking too! These taste even better than I expected.
