I've had my fair share of CFS with venison backstrap and tenderloin.
This may be a stupid question but, is there any taste difference chicken frying venison ham steak?
Is this done with the ham steaks off a deer?

No different in taste. Just tenderize before cooking.

We always tenderized them and chicken fried them feeding my 4 boys when they were young. Awesome food for sure John.

i agree no difference in taste. as said before the secret to great fried venison is tenderizing. i use a LEM hand crank tenderizer. run meat through several times and you can cut with fork.

I assume you're calling the hindquarter a ham steak. For one thing, the hindquarters are not hams but we`ll save that for another day. You can cut the hindquarters into steaks, tenderize and chicken fry all of it if you wish. If done properly it`ll be great.

Get you one of these knives like I did. I sold my Hobart tenderizer a few years ago and bought one. The 10Derizer knife works great. I actually used it today.

Backstrap and tenderloin are already tender. Sacrilege to use that as chicken fried cube steak. Those cuts are best for the grill. I separate the sirloin and round and steak them then run through a cuber. Makes awesome CFS.

Bought one and we use the heck out of it. Works great and is easy

Good morning to the group, first, we NEVER fry tenderloin! that goes on the grill, to good for
frying pan!
Steaks and such, pending the cut, we mostly almost never tenderize meat, tuff meat makes hamburger,
the key to tenderness is marinate your meat!
We like the cheap Italian salad dressing, and i mix a slight amount of ground up or powdered ginger in the
mix. Do this mix for 10hrs prior to cooking.
