She just wanted plain meatloaf tonight, with lots of ketchup, and boiled green beans and a baked potato. I like spice and taste, so amped it up some. Bacon weave wrapped meatloaf, with Hatch chiles and cheddar cheese. Fries, and her green beans, but with butter!! The competition BBQ sauce adds a nice vinegar bite.

Thanks for the tip if Hatch Chillis for meatloaf! have 2 packs of venison left from last year, gonna
use next week.
May just use some left over meat and make a stuffed pepper, like we do bell peppers....

I grew up eating mostly korean food, I'd say like 90% or more. So my exposure to western/American food was school and other limited sources. Based on what I heard, I had this preconceived notion of how horrible meat loaf was. I've seen the light now and make my own version. I even grind my own meat. Meat loaf may be a very plain and humble dish but i love it! especially with ketchup.

Love some meatloaf. Usually make up a several meal batch and smoke it in mealsized loafs. Tried Smoked Meatloaf at 407 several years ago and have been smoking it since.

Hinze 57 or bbq sauce instead of ketchup for us.

I would eat either or both.

My wife likes hers bland, I like Whataburger spicy ketchup on mine. So she makes 2 small loafs.
