Chicken, ribs and turkey came out great. Pork chunks and tri tip need another 1/2 hour.

Pulled the pork and tri-tip. This is the first tri-tip I’ve cooked, cooked it like a brisket. It was prime grade from HEB. It had about 50% shrinkage, started off at 4lbs, trimmed maybe 1/4 pound before cooking. I’ll cut into it in a little while.

Haven't tried a tri-tip like that, something to add to the list. I usually smoke them to medium rare, slice across the grain, and serve with something bright like a chimichurri

Tri-tip is one I have found to benefit from long marinades. Nice

Tri-tip is one I have found to benefit from long marinades. Nice After smoking to 160°, I wrapped in foil. Added beef broth in the foil also. It took a few more hours to get to 200°+.

I have never cooked a tri tip but thought they were traditionally prepared something less than well done no? This one was melt in your mouth tender. But with the amount of shrinkage, I don’t think I’d do another for the cost . I’d call this trip tip cooked Texas style.
