Loaded up the Jambo this morning, cooking for long trip north later this week. Pork butt cut up, spare ribs, rib tips, turkey breast, tri tip and 6 chicken halves

Chicken, ribs and turkey came out great. Pork chunks and tri tip need another 1/2 hour.

Pulled the pork and tri-tip. This is the first tri-tip I’ve cooked, cooked it like a brisket. It was prime grade from HEB. It had about 50% shrinkage, started off at 4lbs, trimmed maybe 1/4 pound before cooking. I’ll cut into it in a little while.

The tri-tip turned out muy bueno! Was extremely tender, tasted like brisket

Haven't tried a tri-tip like that, something to add to the list. I usually smoke them to medium rare, slice across the grain, and serve with something bright like a chimichurri

After smoking to 160°, I wrapped in foil. Added beef broth in the foil also. It took a few more hours to get to 200°+.

This one was melt in your mouth tender. But with the amount of shrinkage, I don’t think I’d do another for the cost .
I’d call this trip tip cooked Texas style.
