The local butcher brought in Australian wagyu. The ribeye looked perfect so I had to try.
Potato, jap mushroom and crab mushroom all came from Wise Choice custom meats as well.
Sousvide at 128 then a two min sear. Filets for my girls.

Wise Choice is a gem in my opinion; every time I pass through Decatur I stop and stock up the freezer. The last batch of pork chops I got were like butter.
