Getting ready for the smoker…. Took six fillets out and brining them for 8 hours in 1 part kosher salt and four parts brown sugar…. After the dry brine I’ll rinse then let rest/dry for 4 hours then smoke at 200 degrees….last half hour I’ll use a honey/cayenne glaze to finish… Mouth is drooling already….

Pulled from the brine. Rinsed and patted dry on a cooling rack and back in the fridge to dry a couple of hours. I’ll then set them out on the counter to get room temp. Then off to the smoker….

Y'all are making me homesick for smoked Oregon kokanee -- land-locked sockeyes that cut that same beautiful oil-rich red. YUM!

I can smell and taste it. Ambrosia! Middle brother is in Kenai fishing sockeye and halibut this week, the lucky devil.
