Fired up the Jambo this morning, prepped a 5# Turkey breast and a pork duty. Cut the butt into smaller portions, filled a Black BBQ recipe. Put both meats on at noon, pulled the Turkey at 3, the pork at 3:45. Waiting on the pork to rest, then pull it. Before and after pics.

Looks lovely. Bet its delicious!! It is! Shredded the pork and sliced a little of the Turkey. Already divided into smaller portions, vacuum sealed and in the freezer.

Turkey breast looks great. I`m gonna try one soon. It’s an easy cook. Black pepper, garlic powder and paprika. Also soak in water a while to purge some of the inject brining, before seasoning. When placing in smoker, tuck thin part under making a ball shape. Smoke to 145°@275°, takes approx 2 hours. Wrap in foil w/melted 1/2 stick of unsalted butter, return to smoker til 160°. Pull and let rest 15-30 minutes. Way tastier and more economical than the deli meat at grocery store.

It didn’t take as long as this recipe said it would. Probably because I cut it into smaller portions. I used a yellow mustard binder and some Kennys pork rub. Thanks. I'll probably be using the kamado smoker. Usually cooks a little faster, but takes longer to get a good bark and color. Usually around 180-185 til wrap time.
