Made up a big batch of rotisserie chicken with Hatch chiles, sweet onion, cream cheese, mozzarella cheese, and some Cotija sprinkled on top. Tasty!!

Came here looking for a recipe. After seeing your work, I'm really looking for the recipe.

Yum. Just bought a few of the new crop Hatch at Brookshire's and roasted them on the gasser. The smell transported back to New Mexico in an instant.

1/2 sweet onion, diced and sauteed in butter
1 clove of garlic, diced and added to onion
2 cups rotisserie chicken, shredded
6-8 Hatch chiles, cleaned and seeded, cut into 1/2 to 1" pieces
One package of cream cheese
Squirt of sour cream
1-2 cups cheese
Salt and pepper

* some like to add a little sweet corn to the mix
