Fired up the Jambo for a 5# boneless Turkey breast today. On the pit at 3:15, took it off at 6:00 and let rest 20 minutes. Love doing these shorter 5-6 hour cooks to get the hang of the new smoker. I’m so impressed with how it holds temp.

Looks great. I did a breast the other day that I swear came to temp in 2 hours and still turned out a little dry. Did you roll up the breast and tie it to get the shape?

Looks great. I did a breast the other day that I swear came to temp in 2 hours and still turned out a little dry. Did you roll up the breast and tie it to get the shape? I checked temp at the 2 hour mark, it needs to be 145° before wrapping. Then pull at 160°. I tucked the thin end under, no need to tie it. Added a melted stick of unsalted butter in the foil at wrap time.
