I love making jalapeño cheese sausage. So far have always used hi-temp cheese. The stuff is a little difficult to find and has gotten pretty expensive. What are other options to hi-temp and/or preferences.

The high temp cheeses are a little over priced and also over rated for low temp smoked sausage. Typical hard cheeses like sharp cheddar, or provolone work fine, and you can chill it a little to work better. Don't confuse the high temp sausage cheese with grilling cheese like Halloumi or Juustoleipa. Those don't work well for sausage making. As far as your drive to get your supplies, Amazon carries all of them and is next day shipping. They are the only place I have found quality high temp blue cheese, for mixing in my burgers!!

Well stopped by a local meat market they had hi temp for 1/2 of what Amazon is guess I’ll put off finding an alternative.
