Can't always afford the prime and wagyu hunks of beef.

Great looking brisket. Sliced nicely I might add. Thanks. That Victorinox knife does a great job, and doesn't break the bank. Hate when you put some hard long work into trying to make a really good hunk of beef, then you start slicing and shredding the bark off of it.
