Properly browned and caramelized. That's a lot of paying attention to get it just right!!! Just a little flour to thicken. A good onion soup takes several hours, but it was well worth it!!! Gruyere was a perfect chewy topping, after a minute under the broiler. The G&T helped me focus!! smile
