Okay, nothing really special -- but I go so light on the salt due to hypertension. Yielded lots of great chicken for chicken salad sammiches, pizzas, etc. And I just used regular yellow curry, not hot Madras.

Still, looks pretty good and not too complicated.
I'll put it in the meal rotation.

Carved up the leftover chicken and made a Thai curry using this recipe. Easy and delicious over rice, with cucumbers in seasoned rice vinegar on the side.
