We were traditionally just deer hunters and my round steaks are an overnight marinade of Italian Dressing, Soy, Worcestershire sauce, brown sugar, and a splash of hot sauce.

A couple years ago my daughter took an Oryx and last year a Nilgai. Those round steaks looked more like beef to me, so that is how I cooked them salt, pepper, garlic.

She took a blackbuck the other day and looking at these round steaks, they look more on the game side, so wondering do I go back to the marinade, or just a seasoning? How do you make yours?

You grind it up with a little pork fat, season then fry the patty.

Throw it in the trash, go to HEB and buy a ribeye or NY strip and cook over charcoal.

Shot one years ago, came home one evening and wife was cooking blackbuck in the oven, the house smelled horrible!!! Never had venison, axis, or hog smell like that.
Smelled so bad no one would even try it.
It smelled so bad, the German Shepherd wouldn't even eat it.

I shot it, cleaned it, and had it processed so I know it wasn't mishandled. No apparent issues with the animal. Nasty!!!

The blackbuck doe I killed was good stuff, at least as good as the best whitail I have taken. The buck my dog would not eat.

The way I ate most if the doe was chicken fried round was chicken fried.
