Use to have a gal I dated that made what she called Mexican Cornbread pie that was so dayum good.

Vague memory on how she did it.

Mixed a box of Jiffy cornbread and spread it in a deep cooking dish.
Cooked up some taco sort of seasoned hamburger meat in a pan, drained excess fat off then added some corn kernels, diced Jalapenos, some sort of Red Peppers, Onions and not sure what else.
Then she would put them in the pan with the hamburger meat and cook them all together for a short while.

Next put all of that on top of the uncooked cornbread, generously added several types of cheese. Then mix up another box of cornbread and poured it on top of that and bake in the oven like your suppose to do for the cornbread. Hard to describe, like eating a pot pie with a nice layer of Cornbread on top and bottom with a delicious filling in the middle.

It was fricking delicious and I bet Spitfire could knock it out of the park

Sorry, I was showing my wife your post, and for some reason when I first read it. I thought you were being kind of facetious and said " Crawfish corn bread....kind of nasty". That is why I made my comment.

Looks mighty tasty -- and Stub's Mexican cornbread sounds wonderful as well.
I should probably give crawdads another try. We had small ones back in Oregon that were a lot of work to catch and clean, and tasted like pencil erasers. Surely the ones in this part of the world are better as they have such a great reputation.

Recipe?

Roughly followed this recipe. Didn’t add rotel. Added chopped jalapeños. Used whatever cheese we had in the fridge
