Any of y'all have a good marinade for a tenderloin? Going to try to smoke one this weekend for the wife.
I like to use a little soy sauce, a little Wichersister sauce, and a little fresh squeezed lime juice/fresh crushed garlic & some chopped red unions with a little bit of fajita seasoning. Let her marinate over night.
Take it out and pat dry. Brush with some melted bacon grease and hit them with some fresh ground black pepper, put on smoker.
When you have color and almost done then baste with melted strawberry preserves/pineapple preserves/orange/honey whatever you like. Let that set up for a short bit then pull it. At this point I like a light final dusting of your favorite seasoning (or just garlic powder) tent & let rest for 5-10. Slice & enjoy.
If making tacos I like to add cumin to the marinade and some more after it comes out the marinade, and then add (depending on crowd/little mouths) crushed Chile Tepin peppers or whatever you have, don't need a lot. Just don't overcook it, and when in doubt always go less until you figure out what works for you.
Also, right before you glaze it hit it one more time with some fresh squeezed lime juice & melted butter (not margarine). To me anyway, all of those flavors really come together with the smoke when you take a bite.
I have cooked a lot of feral pig loins (and tenderloins) this way or similar and it always got gobbled up.
IMO soy and FRESH crushed or minced garlic sets the stage for whatever you wanna do. Dale's is good too.
