I/we prefer our homemade pork & green onion fresh sausage, but we don’t have any today. My youngest boy loves hot Italian Sausage and anything rice & gravy. Made this once before with store bought Hot Italian and he loved it. I don’t like oregano especially Italian Oregano but the gravy made it great. Anyway, I was gonna cook something else but my 13 yr old wanted this so that’s what we’re eating tonight. Target practice tomorrow. Life is good..

Thanks. I made a backstrap & gravy 2 weeks ago and served it over garlic mashed potatoes. I made the gravy then pan seared the straps separately in a hot cast iron skillet to medium rare, let it rest, then sliced and added to the gravy pot. It sure was good and the kids tore it up!
