I wanted beef ribs, but can't find them. Grabbed some baby backs, but instead of my go-to smoked ribs I did a quick achiote based marinade and cooked on the pit for 3 hrs/no wrap/no sauce which is pretty typical of S Texas. Very tender but still able to slice. Also made a pot of butter beans my kid was hollerin' for but again, no boneless smoked ham hocks lately either so used smoked sausage (sorry no pics but the beans got hammered). My 12 yr old Son's favorite meal is my/our homemade fresh smothered sausage, always either pork & green onion or chicken & jalapeno. I've been slacking so out of what we like. This time Son said "Dad I love hot Italian sausage, let's use that". OK So, this time I used HEB hot Italian fresh sausage for a rice & gravy. ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2023/11/full-28445-406077-5.jpg) My youngest daughter requests my Mexican Rice ALL the time, I said no baby we need white rice for a rice & gravy. She says "Says who, this is our food Dad".  Got me.  So we had 3 cultures mixed into one on a paper plate and it was good. Italian, Mexican, Cajun. Kinda like me, a mutt. Different, but good. Making more fresh sausage soon though. Thanks for looking.

And yes I have killed deer out of that play house in the back that we built for my Nieces when they were little.  House was FUBAR after Harvey but that playhouse remained, big hole in the roof from trees, moved some from where it was at but......still a cool place to sit in & watch deer.
