Hello! I hope everyone’s hunting season is going well. I got a nice deer and want to make some venison sausage. I found this awesome recipe on YouTube. My question is it calls for 4 pounds of venison to 2 pounds of ground pork. What would be a good substitute for the pork? Thanks!

If you’re not a fan of pork, you can use beef. Just remember that you need fat, whether beef or pork.

The pork is mostly for fat and a little more moisture. A friend that doesn't eat pork just uses the higher percentage fat burger meat mixed in with the venison about 50/50 mix tTRC

It’s all about the fat, what ever you like or have on hand.

For a breakfast sausage seasoning High Mountain Original breakfast sausage seasoning is hard to beat. Must be 50/50 for a good blend.

I know lots of folks do it but I hate sugar in any kind of pan sausage it just turns black on the pan and makes a mess.

I buy a cheap fatty brisket and grind it in with my venison, I like it way better than pork.

Same here.. IF you have time Walmart on occasion has brisket that is on sale for less than 1/2 off when it is a few days from its shelf life. I got a 17 lb brisket for $25 last time. I also save the fat trimmings if I just smoke up the brisket. I vacuum seal it up so it stays better until I'm ready to make sausage.
