Too many people just grind shoulders without pulling the flat irons. You’re losing out on the 2nd most tender steak in the beast outside of the tenderloin! Cool on high heat for 1.5min a side for rare, 2min a side for medium rare. For whitetail you could probably take 15-30s off those times.

To pull a flat iron, find the blade bone and orient so you can see the top side (the side with the ridge). On the wider side of that ridge there is a cut of meat that lies on top of the blade and to the side of the ridge. Cut out that piece of meat and separate the two flat irons from the layer of cartilage that runs in between them. Clean up the silverskin from each steak, square them off, and you are done.

We take them off of everything we shoot now. Husband even agrees to split and remove the middle membrane because they are so good.
Going to pull an elk flat iron out now because of this post, thank you.
