OP Blank THF Trophy Hunter B Joined: Sep 2010 Posts: 5,792 Idaho Falls, Idaho	I marinated a big chunk of WT backstrap in EVO, black pepper, and spices then wet aged for a week in the fridge. Pounded it out thin enough to read a newspaper thru it!!! Super tender and perfect for tonight's dinner, when the wife wasn't hungry. Bread crumb stuffing and whole milk gravy, with lots more black pepper. Was a lot of food, and I got filled up early. I bet I'm having deer steak sandwich for lunch tomorrow!!
