Similar to my gun question, do you clean your deer in season with one particular knife, two knives or three or more. I have a nice Gerber with a scerated saw type blade and separate regular blade that I really enjoy saw cutting through brisket with. Also like my razor sharp Puma lock blades and Buck lock blades. So, I'm a multi knife user most seasons.. What about U??

I carry a Havalon with replaceable blades and an old Case XX Trapper. I have never found a time when I needed any more knives on a hunting trip

So, I'm not supposed to bring 6-7 knives with me to the skinning station each time?  I usually have way more than I need. Usually have 2 that I use when skinning animals, but may reach for a third dependeing on what I'm doing.

I have a custom-made skinner for skinning, gutting, and breaking down the backstraps, tender loins, hind quarters, and hams. I process all my own meat and make sausage. I'll use that same knife or a boning knife when I get home. The only other thing you might want is some banana loppers. They help bust the rib cage and pop the pelvis. You can do it with a knife but the clippers are nice. You really only need a skinner and boning knife. I processed six deer myself last year and helped buddies do quite a few with those two tools.
Now, the question of how many knives you should own. I had a ton until I got married. I've been giving them away to hunters that have their first deer or a memorable trophy to clean out the room. You should always have a few good fixed blades and a small folder on you.

I have a Case that I cut the rubber handle off and made an elk antler handle for it. I did not do a great job as far as looks but it works good and feels good in hand so that is my hog knife because nobody is going to see it. Have a White River that I added Rattlesnake skin to the sheath and that is my deer/axis etc... knife. When I hike into the back forty for hogs and may only carry out a couple backstraps or kill a snake I carry a smaller lightweight Gerber fold out on my belt that I have had for 30 years.

I use a Havalon and a fixed blade heaver knife if needed. I keep a small diamond sharpener in my pack in case I have to touch up the fixed blade. EZ I don't need 6 knives.

I like to try different blade profiles and different steels from custom makers. I hunt out of a camp, so portability is not an issue. I can bring as many as I want. ya! GWB

My wife got me a Benchmade knife for Fathers Day last year which I used this past season. An outstanding knife! It's a fixed blade. I carry a Puma folding as well. I got a Ken Onion edition knife sharpener, it will put a really nice edge on knives.

I usually only use 1 or 2 different knives for deer and pigs, Buck 120 and a Kershaw folding, both I keep razor sharp ... my fanny pack and back pack have likely a dozen or more assorted different makes/models should I need something else.

Usually just carry a havalon and a small jack saw. If I’m butchering, I’m leaving it as large as I can, this could be quarters or the whole animal just skinned depending on cooler space. I will wait to butcher it after it’s aged and I have the proper tools at home.

Some of this depends on whether you want to save the hide- then a skinning type blade with a rounded tip. Cheapest, best is the Dexter Beaver skinning knife for around $20. Then you need a ripper type blade for some more delicate cuts. Like the Green River ripping blade- a 4" paring knife basically. But I usually just use a single blade with a dropped point.

In my hunting pack, I keep a buffalo horn handled Case XX skinner, a 31/2" folding Outdoor edge with changeable blades, and a browning folding knife that I got for high school graduation, and in case I need more there is a Leatherman FREE P4. I also have a folding SOG Pentagon XR, clipped to my pants pocket at all times

I carry a Keith Richard’s custom knife on my belt. That’s the only knife I “need”
In my pack I carry a folding case with 3 browning knives, a gut hook and a saw. This comes in handy at a cleaning station where I will use 2 knifes to clean an animal.
For it is not the quarry that we truly seek, but the adventure.

Another Havalon fan boy. I like the Baracuta profile best and keep a dozen or more blades at the ready all the time. I also use a Schrade Old Timer fillet knife. Only two I need, well the one is actually at least a dozen. But I do have a problem. I love old Carl Schlieper knives, hammer forged in all their sharpness beauty. I may have 10 or 20 of the them.
They make ammo specifically for hunting for a reason!

My personal preference is high carbon steel. It takes an edge better than SS.
I used to make my own but they were never as pretty as the guys that build and advertise them here. Those guys are skilled artists.
At a gun show, I saw some blades, no handles, for sale. The seller said they came from Jantz Supply in Oklahoma. They were high carbon steel. I bought a couple, put some handles on them and found that I could buy a better tool than I could grind out and make.
I still, occasionally, grind down some industrial hack saw blades, also carbon steel, for big choppers.
BTW, I also learned that if you do it long enough without, hearing protection, you’ll be wearing hearing aids. Huh?

I use Uncle Henry(USA) or Case folding hunter knives for cleaning/gutting. Carl Schlieper /eye brand are awesome but unobtainium these days. I used eye brand exclusively during my taxidermist years.
