1"-1.25" thick chops, cooked to 135° and rest for 5-10 minutes. Preheat cast iron to375°- 400° and turn chops every 2-2.5 minutes till done.

Sea salt, black and white pepper, garlic and Goya Sazon Culantro and Achiote Seasoning.

This is what I had for dinner last night with roasted yellow potatoes and homemade green chili cream corn. Love pork chops. Shoulda took a pic

We have them almost weekly. HEB sells them (center cut only) sliced at 1"-1.25" @ 2.59 lb. in Family Packs every day. I don`t think the price of pork has gone up much or at all in the past 15 years.

I found whole loins for $1.29/lb and cut mine about 1.25" thick. Ended up with 16 chops. Should have bought another one.
