The missus is an elementary teacher and out for spring break this week. She is also a brisket fiend and asked me to cook one for her to snack on this week. Took one out of the freezer and put it in the sink to thaw before bedtime. Seasoned it up with Chupacabre and put it on at 5 am in the dark. After 4 hours it is holding steady around 225° and looking good.

At 10 hours it is still holding 225° and the bark is taking on the look of greatness.

13 hours and it is ready come off the grill.

Wrapped it in foil and let it stew for another hour before slicing it. Tender and moist with a nice bark and the missus is happy. Happy wife, happy life!

That Brisket looks GOOD.

What impresses me more, as a Brisket Connoisseur lol, is you did that Brisket on what appears to be a Weber Kettle Grill with charcoal and indirect heat. That takes mad skills.
