Well it's 6 degrees and snowing , nice little North wind to go along with it. Making some red chili today. About a month ago our friend with the restaurant downtown, sat down beside us at his bar and asked if we wanted to buy some bison meat. His supplier had fresh to frozen boneless bison clods and chuck roasts for $2.50 / lb and he bought a bunch. He was offering some to his friends and family so we jumped on it. We got 35 lbs of boned out front shoulder, clod, and a big boneless chuck roast. Roast made burger and a few small roasts, clod was steaked out and some trimmings for burger. I'm using 1 lb of bison burger and about 1 1/2 lbs elk burger for my chili. Not sure on beans or not yet, spouse likes them in it though. I put a 3 bean mix when I add them. Chugwater chili seasoning is my go to for main seasoning. red onion roasted green chiles- nice spicy Big Jim's from Colorado garlic canned whole tomatoes Probably some celery diced in for flavor, spouse likes that too. I have some smoked guajillo chile powder as my secret ingredient, just a pinch. Mexican oregano cumin Pics of chile when it gets going. We're headed down there end of Feb for hog hunting so you all need to get your weather together and be warm for us, lol!!

Maybe not 70's, 60's would be great ! Got the chili cooking, no beans this time and I'll probably hear about it. I can add some tomorrow if wanted, it's a 2 day pot of chili for sure. yeah, you can always add beans in later, separately ... I like adding beans after the initial bowl or three. a few days down the road Looks good, I like that orangish red coloration, looks like what my mom used to make.
if you want a different flavor profile that is awesome, add in some chopped smoked brisket. Brings chili to a whole different level

Snowpack looks good Blank, good luck with the shovel. It turned out great. Roasted Big Jims added some nice heat. Looks great. Bison and Elk would be a great combination! (I'd add beans, though, but that's just me.)
