Smashed all the Mayacoba beans into refried, stripped the meat off the rib bones, cheddar and Cotija, some of that in house hot salsa, extra onions and Modelos!!! I've done something similar with leftover baby back ribs, but, damn, yours look awesome! I like the Cotija idea!
