Thanks to Skinnerback for the suggestion on the beans; sort of a cross between a white navy bean and a sweet butter bean. Delicious, and the Insta-Pot did a great job! Got some brisket ready for tomorrow's breakfast. Full weekend planned, so getting an early start.
