Took an 11lb brisket out of freezer my son gave me for Christmas. It’s on the bottom shelf of the fridge. How many days should it take to thaw out?

Just did a 7# sirloin roast the other day. Left it on the counter overnight starting at 9:00PM, the next morning it was thawed all around, but still frozen in the middle. Peeled the bagged meat, rinsed and trimmed at 0900, and started roasting at 1000. 200 degrees for 5-6 hours and it was perfect in the center at 125-130. I would think a big brisket would take twice as long to thaw, and another 6-8 hours to cook!

I’m not in hurry for it to thaw. Weather should be nice enough on Thursday to fire up the smoker.

Well it takes 3-4 days in the fridge to thaw a 12-15 lb turkey, therefore I would leave it out overnight to thaw…just sayin

It'll take forever to thaw in the fridge. I'd thaw it on the counter, then put it back in the fridge until Thursday.

I’ll leave in fridge til tomorrow morning, then set out on counter during the day. Going on smoker Thursday.

I know that every Thanksgiving, I pull the turkey out of the freezer 3-4 days in advance, put in the fridge and most of the time the middle is still frozen.

If you have time, just give it three or four days in the fridge. That's the "best" way to thaw anything, I believe. But leaving it in the sink overnight would be fine, too. I do that frequently if I'm pinched for time.

It was about 3/4 thawed yesterday morning when I set it out on the counter for a couple hours. It went on the smoker at 11 this morning.

It’s smaller than I usually cook. It started as 11#, after trimming it was probably 9#. Good thing is I’m hoping it’s not a 12-14 cook. I’ll probably pull and wrap in butcher paper after 6 hours , then into the oven @ 250°.

Pulled off smoker at 9. Found out the element in the oven is burned out, so back on the smoker til it hit 203° at 1 am. Put in small cooler to rest this morning. Had a couple slices of flat for breakfast. Not a moist as I like, but it is tender. So much for a shorter cook, it was 14 hours total.

I'd give it about 3 days. You don't have to cook it the second it has thawed out, it can be totally thawed and okay for another day. As stated, the slow thaw is best. Using water and a quick thaw. In my humble opinion it might not taste quite as good.
