This is like asking what's the best rifle cartridge or what's the best truck. You're gonna get lots of different answers, and maybe a few arguments.
Personally, I love the Lansky sharpeners. You can get stone or diamond. The stone set is half as much. https://www.amazon.com/Lansky-4-Sto...sharpener&qid=1675279326&sr=8-12

One that I would love to get is the Wicked Edge. Same concept as the Lansky, but beefier. I just haven't wanted it bad enough to plop down $400 yet.

Lansky for all my nicer hunting knives (I have diamond and regular and also the sticks). Work sharp for pocket and fillet knives (Bubba blades, etc.).

The Spyderco SharpMaker works well for folders and fixed bladed knives of modest length. It’s also convenient, quick, and moderately priced.

i only use replaceable blade knives now

BTW, start out with high carbon steel instead of stainless and you will find a big difference. An old time blacksmith, my mentor, told me many years ago. “Boy, high carbon is for cuttin and stainless is for lookin at.”

If you're wanting a system, l started off with an edge pro apex and I've seen lots of good reviews for the wicked edge. I taught myself to do it on my grinder which is much faster but a lot longer learning curve than using a system like above.
