Tis the season so lets see if you make tamales or if you have great tamales you bought, share some pics.
Preparations tips would be greatly welcomed too.

I finally found a someone to make me some elk tamales. Dropped off a 6 lb roast this morning. He said they should be ready by Thursday.
I've bought tamales form restaurants here too and they were just fine but looking forward to getting my elk back in tamale form.
They will be traditional style tamales, shredded and seasoned as if pork. The chicken green chile ones he gave me to try were awesome.
I think now we are on their tamale list which will work out great in the future too.

I've been told that there is a tradition in Mexico to make tamales for New Year's Eve. If a supermarket is selling corn on the cob I'll save the hulls, leaves (too cheap to buy them). I've only made them a couple of times. One time for the filling I used Chorizo sausages for half the meat-as seasoning- and they came out pretty good. My problem is I'm by myself so if I make a big pan of them- I keep nibbling away. I have a lot of turkey and I'm thinking they could work out well.

From what I know it is a Christmas tradition dating back for centuries.

Mmmmm ... tamales. I have found most Stripes stores that have the fast food service inside has some pretty respectable tamales. HEB sells Mi Tiena tamales that are decent also. Costco pork is pretty solid as well.

there used to be numerous people online, FB Market Place, out of the back of a truck in a parking lot, etc. but after a friend that used to be in the food service industry reminded me, you have no clue where those tamales were made OR the condition of the kitchen/home they were prepared in, as in no health department oversight ... makes me think twice before I buy roadside in recent years.

My wife is having a few friends over next Monday for a tamale making party they do it every year. I'll smoke a pork shoulder Sunday so it will be ready Monday. Pork is the best for tamales.

Would love to make them some day but never have. For now am lucky enough to have a “burrito lady” that comes by our work T-F mornings and sells gorditas and burritos out of a cooler. She happens to do tamales every Thursday. I have them Atleast once a month. Will try to get a pack this week for pics. Pepper and cheese or chicken for me

My bride makes them Arizona style like her Mom (Nana Castillo) taught her: Shredded beef brisket and a jalapeño strip and green olive in each one. I love 'em for breakfast, topped with a couple of sunny side up eggs. [Linked Image]

I worked with a guy and his sister that brought them to work and sold tamales that their mother had made. I placed an order with him last week for some. Best tamales I`ve ever eaten. This is last years in the picture.

Question- in that photo- how do you make the rice. I've never been able to duplicate what I get in restaurants.

Don’t mean to highjack this thread, but will share my wife’s “Copycat restaurant style Mexican rice”. Ingredients 2 tablespoons butter, 1 cup uncooked white rice, 3 cloves garlic minced, 1/2 teaspoon ground cumin, 1/4 teaspoon chili powder, 1/4 teaspoon pepper, pinch of cayenne pepper, 1/4 cup finely diced onion, 1/4 cup tomato sauce, 1&3/4 cups chicken broth, 1-2 tablespoons fresh chopped cilantro. Melt butter in a large saucepan over medium heat. Add rice and cook, stirring constantly until just golden. Add garlic, cumin, chili powder, pepper and cayenne and cook a few more minutes. Stir in onions and cook until onions are tender. Stir in tomato sauce and chicken broth and bring to a boil. Reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is tender. Fluff with a fork. Stir in cilantro.

I make mine similar to cm250, but I use the Tomato Bullion with chicken flavor by KNORR. I got the tip from Mexican friend of mine who would always bring his mother's authentic Mexican food to work.

I tried them a couple times, but was just too much roughage for my system to handle. Nobody told me you're supposed to peel, before eating!!! smile

There was a US President that started eating the husk- they should have let him. I always make a red chili type sauce but there are countless styles. If you make them small, so much the better-unless you have huge husks.

Ever tried shrimp with the shell on? One of my buddies said it was good, cant remember if they were seared or grilled but he was right.

Peel and ears are the best tasting to me, whether hot or cold. I love them in a spicy red brothe, where you can lick your fingers after each one!! The only way I can eat the shell is if they are fried really crispy.

That`s a great looking plate of food with 1 exception. Those eggs need a lot of black pepper. Bacon looks perfect. coffee

Lol long bacon it’s a normal dinner plate! I normally hit it till crispy like a chip low and slow but we where to hungry

Edit-very true on more black pepper, but my grinder turns it into a fine powder almost so it’s hard to see
