The first I ever made was last year after Halloween. I used the Jack-o-lantern. Roast the unburnt parts and used that. Worked okay but early (Halloween versus Thanksgiving) so this year I bought a small "pie pumpkin". Same drill- cut in half and roasted 25 minutes and scooped out the insides but not any sweeter or better than the big pumpkin. I think sweet potato is better.

Raw pumpkin is sort of bitter, it needs sugar and spices. Most sweet potato pies taste like pumpkin but next time try cutting down a bit on the spices so you can taste the pumpkin more and sprinkle a coating of light brown sugar on top, sort of a crust.

Cherry
Coconut Cream
Peanut

We ended up with 3 store bought Pumpkin Pies and they were pretty good with whip cream up
