Brine for 3 days in sugar and salt then dry it and covered in butter and rub for 2 days in the fridge. Stuffed with dirty rice and smoke at 225 for 8 hours over post oak. ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2019/11/full-38597-209622-img_20191122_100733_090.jpg)
Just to make sure that it is done thoroughly, I go both ways.

I tried this one out two weeks ago for our traditional meal to test it out that you might look at. https://www.allrecipes.com/recipe/16984/turkey-in-a-smoker/I followed the stuffing and smoking steps and use DP as the cola. Since we don't like a heavy smoke taste I placed it in a large tin turkey pan and only smoked it for two hours using oak at 250 degrees. Then I carried it in and finished it off in the oven at 300 degrees until it hit the desired temperature in the drumstick. Turned out moist and tasty. It will be the recipe I will be using this week.
