Not a fruitcake fan....but if I had to have one....it would be this one.

My Brother lives in Corsicana and when we go to visit Him and his Wife we often stop at Collin St. Bakery and pick up a few things.

My wife makes three a year. Cake takes five hours to make from start to finish four of which is cooking. After it cools we begin soaking it for about a week with rum, brandy, or bourbon. She then cuts it into quarters of which we freeze three for the next three months. Here’s a piece of what it looks like. [Linked Image]

The ones Costco makes were good, but didn't find one this year when I was there 2 weeks ago.
I can't have much, sugar and carbs, but I do like to indulge.

I've tried them a few times over the years, because it sounded good when I was a kid. Gross. Kinda like eggnog. Some people like it, the rest of us are sane.

Enjoyed the graham cracker icebox fruit cakes before diabetes hit, since then no fruit cake.

Have had good and bad….the bad always makes you forget about the good. That being said, I will try it atleast once during the holidays.

603 wrap it in some cheese cloth place in a large container with a lid then sprinkle the rum on it maybe twice a day. Be patient and do this for a couple of days. Cut a sliver of it and if not moist do another day or two.

The only fruit cake I’ve ever tried I guess is my mom’s pear cake and it’s amazing. She started making it when I was a kid from pears off a tree behind our house. It’s a bunt cake with a nice sugary crust.

I guess I need to try regular fruit cake.
