HEB has pork bellies on sale for $3.49 a pound. Picked a couple up today and got one in the fridge curing ready.

Try slicing them 3/4" and smoking them for about 3 hours. Awesome.

200° for about three hours with Applewood until 150° internal. Chilled for four hours, sliced and finished.
