Does anyone know of a processer around the Palestine/Fairfield area. I know there is J&S, but just wondering if their are any others around.

Herrington Processing is great. I have been using Lucinda and her family for 10+ years. They do tend to get full since C&C in Elkhart closed the other year.

There is a guy on Hwy 31 in Athens that processes game. Don't know if he is any good since I always cut my own deer up but Athens isn't that far from Palestine.

Used to be one in Elkhart, but I don't remember seeing anybody there
in a while. There's still the processor/taxidermy place on the loop in
Crockett, I just can't recall the name.
They're always jammed packed every time I passed there and I
know a man that goes there regularly with no complaints

Thanks for all the responses. Googled searched the area and also found 1 in Buffalo called Double H Wild Game Meat Processing and 1 in Maydelle called Cherokee Deer Processing. I hunt off of Hwy 84 between Palestine and Fairfield, so all of the ones mentioned/suggested are within an hour. Thanks again for the responses.

C&C was in Elkhart, shame they closed a few years ago.

I believe Santos on 31 in Athens closed, not 100% though

I used J&S for a number of years, had some hit or miss results. They have some pretty good sausage recipes, snack sticks, etc. I just never know from year to year what will come out of there. Now days, I typically will use them for cold storage if I plan on hunting a few more days, then pick up, stuff full of bagged ice and take back to central TX where I have good results for the past 20+ years.

PMK, I have heard from some people that have/had taken deer to J&S and they said they did not get back near the meat they were supposed to get. These people have been hunting for a very long time, and would know the amount of meat that is supposed to come from a deer. J&S has some reviews on Yelp that people just this year have said the same thing. I have taken a few deer there in the last couple of years, and I always thought I was a little short on the amount of meat that I was supposed to get as well. That is the reason for wanting to find another place.

yep, totally understand. It seems from year to year they have a high turnover of butchers and possibly some do a better job of getting all the meat versus most of the meat. There was a good uptick when Tim Sherber took over about 7 years ago, but hasn't been consistent from year to year from what I have seen. They do make some good sausage (Polish & German) links that I really like, but can get expensive depending on how much you get made.

I used to process all my own when my parents were alive, but once they got into their 80s, it was just too much work for them and more than I wanted to do by myself. I have tried a lot of processors in central Texas ... and have questioned a number of processors on the amount of meat I got back based on my own previous processing results. It also probably depends on how the deer was cared for prior to getting to the processor as well.

If I was looking for a processor down here close to Fairfield, and I live in Palestine ....I'd start in Ennis and go east a mile or so past I-45. On the north side of the road there is one of the cleanest processors I've ever seen a mile or so past I-45. I priced him last year and was not put off except he closes earlier than most shops at the end of season . Super nice older gentleman with good prices and a reputation for great processing.

There is a another processor northeast of Palestine that is a little harder to find the 1st time ....so from the Loop start up 155 and turn onto the FM 315 road that parallels 155 initially, for umm 8,mebbe 10 miles - look sharp for the VFD signs and Wedding Shop on Fm 315 and turn left, go past the Wedding Shop & big pond on your right, turn right and go about a 1/4 mile or so north to the 1st road that turns left ... and go a mile or 2, this is the guy does all the EXO's from the Exotics Ranch west of Oakwood where the RV Park is on Hwy 79, and around the corner from Archie Van Weys' Leon County Shooting Range on the south side of the RR Track and a1/4 mile west.

Again... From the Loop in Palestine, go north on 155 north, once you get past to all the gas stations and car dealers turn left to FM315 and go north bound where the old school bldg is that is almost fallen in beginning to fall down. To confirm the route of FM 315 north look for the signage 1/4 mile north from the old school bldg's you should see an arrow turnoff to the left for the golf course. I've used this guy a time or 2 for some small stuff but as said before, this guy is a little spendy and gets covered up big time with all the Rocky Mountain hunters Elk & Mule Deer.

If you'll make the drive, then Thiess in Normangee is awesome. I drive there from Cherokee county, best link sausage I've had from a processor!

Tommy Thomas does great processing. He is a little north of Palestine off of Highway 19. 903-373-4546
