I am Considering reloading 20 gauge with bismuth. I'm looking for a 3" shell with 1 oz of number 5 bismuth. Does anybody have a recommended recipe ?

BPI is my go to for load data for shotgun shells. Buy their book, it ain't expensive. I say that because there are simply too many variables to be able to give you a blanket recommendation over an internet forum.
