Not sure where gnochi has been all my life but the kids introduced me recently. Stuff is great. Its like little potato dumplins that take hardly anytime to cook and are hard to mess up. I've done mainly pesto with them but have some critter ideas coming around the corner.

I thought about making my own, but after looking at the calendar I didn't have the time. They are little pillow morsels of creaminess for sure.

I have made them before, slightly laborious but delicious. You can boil a few potatoes usually 4-5 small to medium ones lightly salted. Clean outer skin, but we don't remove it. Then mash them skin and all. Then pound them with the outside curve or a large wooden spoon until they become like thick dough. This is where the work comes in. I do it while I watch TV, you can't over pound them. When done right they will be the exact consistency and appear to look like bread dough. Then add some flour and mix in till slightly firmer, then using a full t spoon and a fork roll each gnocchi out onto a well floured wax paper. Let air dry and eat. You can add canned spinach to the mix, sautéed onions. Most important is getting to the gluey bread dough texture, otherwise they wont have that chewy bite to them. Enjoy
