Love a good rice & gravy. In progress. This little girl LOVES to hunt and fish. She asks about deer season every day. We're about to make some more memories, but better than ever.

Looks good cuz, that kiddo’s adorable to  Thanks brother. She askes for fried backstrap every other weekend. Doesn't even want gravy? She is so pumped up about killing her first deer, I can't wait. She will gut the deer herself this year. She's 8 so I will help her of course but she said "Dad, I'm gunna clean my own deer". We'll see.

I have cleaned many animals late at night, all other adults and kids in bed. Not this one, she stays up right there with me. Has no problem with guts. Her deal is she wants the hearts & the eyeballs. When she was 5 she tried to help me pull guts out of deer & pigs. We shoot dove, she will make it clear that she is cleaning them.  and she will and does a really good job for an 8 yr old.

She sounds like my daughter, she wants in the middle of it and she likes the eye balls and hearts as well. I guess that’s why she ended up a RN working with a heart surgeon playing with human hearts  My wife wants no part of it but she sure likes pulling the trigger and seeing things flop around on the ground and her favorite sound in the world is hearing pigs squeal after being blasted. Your raising that one right  , good job!!

That looks great bud and you’re doing a hell of a job at fatherhood Thanks amigo, my kids and grandkid are my reason for living.  I should have taken a better picture. I served everyone else first and then made my plate, wasn't much meat left lol. That gravy though....love it.

Don't have a recipe. I just salt & pepper the meat, turn the heat on my pot up to medium/high. Drop a little unsalted butter in and brown the meat good. I prefer butter over oil, just don't burn the butter. Don't get the pot too hot. Reduce heat & remove meat. Drop in a couple of chopped red onions & cook them down DARK with a little more butter. Nice and caramelized, the onions play the most important role in a dark gravy. Then add the celery & bell peppers. Keep a good stir on it until the vegetables have rendered down well and soft, then cook a little more. Base needs to be thick/dark but not burnt. Then I add minced garlic and stir for a bit until it starts to brown, then I add a little Wichersister sauce, a little Pickapeppa Sauce, & a little Louisiana Hot Sauce for flavor (not for heat). Stir that in for a bit and then I add warm water to the pot, enough to cover the steaks. Let that gravy come together. Then I add the steaks and juice back and let it simmer covered until the meat starts to get tender. Then I crack the lid and let the liquid reduce while the meat tenderizes. Skim the grease off the top. At the end I remove the lid, add Fremin's Magic Dust to taste (or your favorite Cajun seasoning), and let that gravy thicken up and get right. The end result is tender meat, with a flavorful dark gravy that is awesome over some good rice. I prefer Jasmine rice now, especially Jasmine rice from Thailand. My Cajun buddies always frown on me for not using Louisiana grown rice...but I like good Jasmine rice from overseas better. I buy big sacks of rice from a local Asian market. Plate that up with some corn, white beans, or smothered potatoes. Good stuff. I do the same thing with bone in deer steaks or feral pig steaks. Turns out really good, just gotta be patient with the process. It's all about the gravy, the tender meat is just a plus.
