First attempt. I ate some when I was about 10 or 11 years old @ my grandmothers, and it was awesome. Haven`t had any since. I have always liked Sauerkraut and had it lots growing up. Time will tell. I`m gonna trust the process. This is 2 heads in a gallon jar. I`m going to go 12-14 days before I try it. bolt

Mom used to make it in krock pots but when I was young, but that was tooooo many years ago. Hadn’t had any to come close to hers since…..

Agree. I make it in a large jar and I've just been using a water filled glass to compress it and keep it in the liquid. I may have to try to bag method myself. I think 12-14 days is about right for the waiting time.
Looks like you've got caraway seeds in there, that definitely improves it in my opinion.

I’ve come to like Kimchi more than sauerkraut because nobody I know makes it homemade. Kimchi can be shredded after fermenting and works great in place of kraut

Its very laborious to make, but is very good. Walmart carries a brand that is pretty good. I like it warm more than cold, same as kraut.

I love sauerkraut, especially a good home made kraut.

I really love a good kimchi, but have never had any that I liked from a store. I used to frequent a few Korean restaurants that made some awesome kimchi. I need to learn how to make it.

Reading this thread makes my mouth water. My aunt used to make it and it was the best I have ever eaten. I just wish one of her daughters had saved her recipe. I have made several batches using different recipes and can't get close to the same taste. Love some good Sauerkraut and Smoked Sausage pan fried.

Love sauerkraut but never made it. My favorite bought mine is Libby’s. On a hot day I love to get it out of the fridge eat it with pickles.

Libby Bavarian has been my go-to for canned sauerkraut for years. It has a little bit of sweet to it.
